Ingredients to make Lauki Ka Raita
Gourd (small) – 1
Curd – 2 cups
Cumin – 1/2 tsp
Asafoetida – 1 pinch
Green chili – 1
Green coriander – 1 tbsp
Desi ghee – 1 tsp
salt – as per taste

How to make Bottle Gourd Raita
To make flavourful bottle gourd raita, first wash the bottle gourd and then with the help of a strainer peel off the top of the bottle gourd. After this grate the bottle gourd. Now put water in a vessel and heat it on medium flame. When the water becomes hot, put grated bottle gourd in it and boil it for 7-8 minutes. After this, turn off the gas and take out the grated bottle gourd in a vessel. Gourd will become very soft.

Now take curd in a bowl and beat it well with the help of a spoon. After this, put 1 spoon of desi ghee in a pan and heat it. When the ghee melts, add cumin and asafoetida to it and crackle. After frying for a few seconds, add whipped curd to it. After cooking the curd for 1 minute, add boiled grated bottle gourd to it. Add green coriander leaves, green chillies and salt as per taste and mix for some time. After cooking the raita for 1-2 minutes, turn off the gas. Flavorful gourd raita is ready. Serve it with roti or paratha.
